Maybe you're not already a die heart Foreal Foods/Cocoburg fan, so you might be asking yourself - what the %$*# is NBC?

NBC = Nothing But Coconut, the world's first tender strips of dried young coconut read: not your average coconut chip. It has a naturally sweet, nutty flavor profile and with just ONE INGREDIENT it is the simplest, healthiest but most importantly delicious-ist snack we've ever tasted.

In an attempt to recreate our own episode of Chopped, we sent our creative squad home with some bags of the extra crunchy NBC. Our only instruction - give this batch some new life! We liked the recipes so much we just had to them share with you all.

FYI you're getting a grab bag, some of these bags are filled with coconut chips!

For the thicker, crunchy pieces -

Vegan Mac

Vegan Mac n Cheese: allergic to tree nuts like me and bummed when every vegan mac recipe you find on the internet calls for soaked cashews?! Boy do we have a solution for you!
  • Soak NBC in water overnight in the fridge
  • In a pan, caramelize onion and garlic until brown 2 tbsp. coconut oil
  • Blend NBC in coffee grinder until buttered
  • Add blended NBC, onion, garlic, 4 tbsp. Earth Balance and nutritional yeast to a blender
    • Add a little pasta water if need be
  • Cook pasta according to package directions
Smoothie

Superfood Smoothie: do you love young coconut meat in your smoothie, but don't have easy access to fresh green coconuts?! We can fix that (with a solution that doesn't go bad in 4 days!)
  • Soak NBC in water overnight in the fridge
  • Add to your favorite smoothie

Pro tip: because of the healthy fats and MCT's in the NBC, it adds the fat and creaminess you'd normally get from a nut milk or butter so you can leave those out and achieve the same results.

Here's the recipe our founder Seth used -

  • A few pieces of NBC soaked overnight
  • Fresh turmeric, pinky sized piece
  • Raspberries, handful
  • 2 scoops pea protein powder, unsweetened

Coco Butter

Coconut Butter: have you ever had FRESH COCONUT BUTTER made with only 1 ingredient? We hadn't either until we screwed up our NBC and threw it in a coffee grinder...
  • Clean coffee bean grinder and fill with a bunch of NBC
  • Blend until buttered
  • Feeling more adventurous?! In a separate blender add your favorite flavors - cacao, turmeric, cinnamon to name a few
  • NBC grounds can also be used for vegan shortbread cookies, pie crust, or yogurt topping

Vegan Parm

Vegan Parmesan Cheese: we all love that overly processed vegan parm, but what if you could get the same taste and texture with just 2 ingredients!?

  • Clean coffee bean grinder and fill with a bunch of NBC
  • Blend until grainy
  • Refrigerate for an hour or 2 to dry it out
  • Add a touch of salt, all the nooooch and some garlic powder
  • Top on vegan pizza, pasta etc.

salt n vinegar

Salt n Vinegar chips: bet you can't have just ONE.

  • 1 Tbsp. of vinegar (I used ACV)
  • Sea salt, to taste
  • Shake up the bag of NBC
  • Re-bake at 350 for 5-10 minutes to get rid of some of the moisture
